The color may have just faded. Then follow up with an "overdye" technique, using a typical fabric dye. The black plastic kick panels are also correct, as well as black dash and console sides (if console equipped). The top color would be determined by your "trim tag" on the firewall. The well under the top would be black, but even my first '69 I had in '74 was faded to a yucky greyish-brown (some might call it "taupe").   I can't easily answer your power window questions though, but I can tell you any GM car built between about '64 and '70 have the same style switches, so look around at cruise nights and car shows - you'll see them.
